Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon granulated sugar
- 1 sticks (8 tablespoons) cold unsalted butter, cut into small cubes
- 5 tablespoons ice cold water
- For the filling:
- 3 large eggs, lightly beaten
- 1 cup packed dark brown sugar
- ½ cup Lyle’s Golden Syrup
- 1 teaspoon vanilla extract
- 3 tablespoons melted unsalted butter
- 2 tablespoons dark rum
- pinch of salt
- 2 cups pecan halves
- Egg wash (one large egg beaten with a little whole milk)

%20pie%3C/p%3E%3Cp%3EGot%20bourbon,%20but%20not%20rum?%20No%20problem.%20Bourbon%20substituted%20for%20the%20dark%20rum%20is%20equally%20delicious.%20This%20pecan%20pie%20can%20be%20made%20up%20to%202%20days%20in%20advance%20so%20scratch%20it%20off%20your%20list%20early.%3C/p%3E%3Cp%3EFor%20the%20pie%20crust:%3C/p%3E%3Cp%3EFor%20the%20pie%20crust:%3C/p%3E%3Cp%3EAdd%20the%20flour,%20salt%20and%20sugar%20to%20a%20large%20food%20processor%20and%20process%20until%20combined.%20Add%20the%20butter%20to%20the%20dry%20ingredients%20and%20pulse%20in%202-second%20increments%20until%20the%20butter%20is%20in%20pea-size%20pieces.%3C/p%3E%3Cp%3ESprinkle%20the%20water%20over%20the%20dough%20and%20continue%20pulsing%20the%20mixture%20until%20it%20comes%20together%20to%20form%20a%20large%20ball.%20Do%20not%20over%20process,%20as%20the%20dough%20will%20get%20tough.%20Remove%20the%20dough%20from%20the%20food%20processor.%20Press%20the%20dough%20into%20a%20disc%20and%20wrap%20with%20plastic%20wrap.%20Refrigerate%20the%20dough%20for%20at%20least%20fifteen%20minutes%20and%20up%20to%20one%20day.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees.%20On%20a%20well-floured%20surface,%20roll%20the%20dough%20out%20to%20a%20large,%20%C2%BC-inch%20thick%20round%20(about%2014%20inches).%20To%20prevent%20the%20dough%20from%20sticking%20to%20the%20counter,%20brush%20the%20dough%20with%20flour%20using%20a%20pastry%20brush%20as%20you%20roll%20it%20out%20and%20flip%20it%20over%20using%20the%20rolling%20pin%20to%20support%20it%20after%20every%20couple%20of%20rolls.%3C/p%3E%3Cp%3EDraping%20the%20dough%20over%20your%20rolling%20pin,%20transfer%20it%20from%20the%20counter%20to%20the%209-inch%20pie%20plate.%20Trim%20around%20the%20edges%20as%20needed%20and%20patch%20up%20any%20holes.%20Use%20the%20tines%20of%20a%20fork%20to%20gently%20prick%20the%20bottom%20of%20the%20crust%20to%20prevent%20air%20bubbles%20during%20baking%20and%20place%20in%20the%20freezer%20for%20at%20least%2015%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20pie%20plate%20from%20the%20freezer%20and%20brush%20the%20entire%20crust%20with%20the%20egg%20wash.%20Pre-bake%20the%20crust%20for%2015%20minutes.%20%20%20Remove%20from%20the%20oven%20and%20let%20the%20crust%20cool%20slightly.%20Gently%20press%20down%20the%20bottom%20of%20the%20crust%20if%20it%20has%20puffed%20during%20cooking.%3C/p%3E%3Cp%3EReduce%20the%20oven%20temperature%20to%20350%20degrees.%3C/p%3E%3Cp%3EFor%20the%20filling:%3C/p%3E%3Cp%3EWhisk%20together%20the%20eggs,%20dark%20brown%20sugar,%20and%20Lyle%E2%80%99s%20golden%20syrup%20until%20the%20sugar%20has%20dissolved.%20%20%20Stir%20in%20the%20vanilla%20extract,%20melted%20butter,%20dark%20rum%20and%20salt.%20%20%20Add%20the%20pecans%20and%20stir%20to%20combine.%20Pour%20the%20filling%20into%20the%20pre-baked%20crust.%20Return%20the%20pie%20to%20the%20oven%20and%20cook%20for%20about%2045%20minutes%20or%20until%20the%20center%20is%20just%20set.%3C/p%3E%3Cp%3ERemove%20the%20pie%20from%20the%20oven%20and%20let%20cool%20for%20at%20least%2030%20minutes%20before%20serving.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
