%20Vive%20le%20seasonality!%3C/p%3E%3Cp%3EI'm%20not%20having%20a%20difficult%20time%20holding%20on%20to%20it%20either%20because%20we've%20had%20a%20return%20to%20(or%20rather%20no%20respite%20from)%20the%20hot,%20humid,%20dog%20days%20of%20summer%20here%20in%20Kentucky.%20Lots%20of%2090-degree%20days,%20which%20makes%20me%20continue%20to%20crave%20cold%20salads,%20tomato%20sandwiches%20and%20summer%20fruit.%3C/p%3E%3Cp%3EAh,%20summer%20fruit.%20Ripe%20berries,%20juicy%20stone%20fruits%20--%20I%20can't%20get%20enough.%20I%20picked%20up%20a%20bag%20of%20peaches%20from%20my%20local%20farmers%20last%20week%20and%20they%20told%20me%20they%20were%20the%20very%20last%20ones%20of%20the%20season.%20Gah!%20The%20last%20ones!%20I%20turned%20a%20good%20number%20of%20them%20into%20a%20gorgeous%20peach%20puree%20(it's%20dynamite%20as%20a%20substitute%20for%20applesauce%20in%20my%20homemade%20granola)%20but%20still%20had%20a%20couple%20left%20for%20these%20peach%20cake%20muffins.%3C/p%3E%3Cp%3EI'm%20calling%20them%20peach%20cake%20muffins%20because%20they%20taste%20like%20and%20have%20the%20consistency%20of%20a%20buttery%20peach%20cake%20but%20--%20surprise!%20--%20are%20healthier,%20with%20very%20little%20sugar%20and%20butter%20and%20soymilk%20in%20place%20of%20dairy%20milk.%20%20Their%20not-too-sweet%20taste%20is%20perfect%20for%20letting%20the%20juicy%20ripeness%20of%20the%20peaches%20shine%20through.%20And,%20because%20the%20peaches%20sink%20into%20the%20muffin%20from%20the%20top,%20the%20muffins%20retain%20their%20cakiness%20and%20never%20get%20soggy.%3C/p%3E%3Cp%3EWe%20enjoyed%20them%20for%20breakfast%20but%20they%20would%20make%20an%20equally%20delicious%20dessert.%20Here's%20a%20few%20other%20ways%20to%20customize%20these%20muffins:%3C/p%3E%3Cp%3EMake%20them%20in%20cake%20form%20instead%20by%20pouring%20the%20batter%20into%20an%208-inch%20round%20cake%20pan%20and%20baking%20it%20for%20just%20a%20few%20minutes%20longer%20than%20the%20muffins.%20In%20cake%20form,%20serve%20them%20for%20dessert%20with%20some%20vanilla%20ice%20cream.%3C/p%3E%3Cp%3EUse%20white%20whole%20wheat%20flour%20for%20extra%20fiber%20if%20you%20don't%20need%20to%20eat%20gluten-free.%3C/p%3E%3Cp%3ENo%20peaches?%20Substitute%20another%20stone%20fruit%20(plums%20would%20great)%20or%20some%20thin%20apple%20slices.%3C/p%3E%3Cp%3EHow's%20the%20transition%20from%20summer%20to%20fall%20where%20you%20live?%20Are%20you%20eating%20crisp%20apples%20in%20cozy%20sweaters%20or%20are%20you%20slowly%20sweating%20your%20way%20into%20fall%20like%20The%20Ninj?%20Do%20tell.%3C/p%3E%3Cp%3EPeach%20Cake%20Muffins%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20first%20four%20ingredients%20(the%20dry)%20and%20set%20aside.%20With%20a%20mixer,%20cream%20together%20the%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20Beat%20in%20the%20egg%20and%20vanilla.%20Add%20the%20dry%20mixture%20to%20the%20wet%20mixture,%20alternating%20with%20the%20soymilk,%20beginning%20and%20ending%20with%20the%20dry%20mixture,%20mixing%20just%20until%20combined%20in%20between%20each%20addition.%3C/p%3E%3Cp%3ESpoon%20the%20batter%20into%20prepared%20muffin%20tins.%20Top%20each%20with%202-3%20slices%20of%20peach%20and%20sprinkle%20with%20coarse%20sugar.%20Bake%20for%20about%2020%20minutes%20or%20until%20muffins%20are%20lightly%20golden%20and%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20Cool%20completely%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3Ewww.yankeekitchenninja.com%3C/p%3E){kind=link}
