  • 3 c. controlled carbohydrate pasta
  • 1 bn broccolini cut 2" pcs
  •     (or possibly 1/2 bunch broccoli)
  • 1 Tbsp. extra virgin olive oil
  • 1/4 x red onion finely minced
  • 1 Tbsp. tomato paste
  • 1 1/4 c. heavy cream
  • 4 ounce smoked provolone or possibly mozzarella cheese diced
  • 2 ounce prosciutto di Parma or possibly baked ham cut thin strips

Directions

  1. Prepare pasta according to package directions. During the last 5 min of cooking time, add in broccolini. Drain and transfer to a large bowl.
  2. While pasta is cooking, prepare sauce. Heat oil in a medium saucepot over medium heat. Cook onion 5 min, till softened. Add in tomato paste; cook, stirring 2 min more. Add in cream to saucepot; cook 5 min, till thickened.
  3. Toss pasta and broccolini with cheese cubes and prosciutto strips. Divide on 4 plates; top with sauce.
  4. This recipe yields 4 servings.
