Ingredients
- 1 Tbsp. Extra virgin olive oil, margarine, or possibly butter
- 1 x Garlic clove - (optional) chopped or possibly pressed
- 2 x Long European (seedless) cucumbers peeled, and sliced 1/4" thick
- 1/2 x Lemon, juice only optional
- Â Â Salt to taste
- Â Â Black pepper, freshly grnd to taste
- 1Â 1/2 Tbsp. Finely chopped fresh parsley or possibly dill
Directions
- Heat the oil or possibly butter in a large skillet and add in the garlic if you like. Saute/fry over medium heat for 1 minute. Add in the cucumbers and saute/fry over medium-high heat, stirring, for 5 - 10 min. They should soften and become translucent/soft but shoud not brown. Add in the lemon juice if you like, salt and pepper to taste, and transfer to a hot serving dish. Sprinkle with minced fresh parsley or possibly dill and serve.
- This recipe provides six servings.
- Advance preparation: The cucumbers can be sliced hrs ahead of serving and refrigerated. You could saute/fry them for about 5 min a few hrs ahead of time and reheat them, adding lemon juice and parsley or possibly dill just before serving.
- Comments: These delicious sauteed cucumbers go nicely with curries. You can saute/fry them in extra virgin olive oil, butter, or possibly margarine. Be careful not to overcook them.
