PA Dutch Pot Pie (Bott Boi) Recipe

This is a boiled pot pie, not one with a crust. It is often called dumplings, but is much more a square cut noodle. It can be cooked in any boiling broth: chicken, beef, ham, or even leftover turkey (broth and meat). It is seasoned with onion and celery, and potatoes are often added.

  • 2 eggs, slightly beaten
  • 1/4 teaspoon salt
  • 3 tablespoons milk
  • 2 and 1/2 cups sifted flour

Directions

  1. Pot Pie Noodle Dough
  2. Combine eggs, salt and milk.
  3. Add flour and work in with your fingers. (I guess you could use a large spoon, but we use our fingers.) Dough should be dry, not sticky. When all flour is mixed in, roll dough (half at a time) on a lightly floured (surface) until very thin.
  4. Cut into 2 inch squares, and drop into boiling broth.
  5. Cook for 20 minutes.
