Directions

  1. Preheat over to 375 degrees Fahrenheit.
  2. Sift flour, sugar, baking pwdr, salt and nutmeg into a medium bowl. Add in shortening, egg, orange zest and juice; beat till smooth and well blended. Fold in the rolled oats and coconut.
  3. Drop dough by teaspoonfuls about 3-inches apart on greased cookie sheets. Bake at 375 degrees for 12 to 15 min, till edges are lightly browned.
  4. Substitution: You can replace coconut with 1/2 c. crushed almonds.
