  • 2 cups chopped and stoned plums
  • 2 tsp minced ginger (optional)
  • 75g caster sugar
  • 2 green cardamom pods, lightly crushed
  • 25ml brandy or Cognac
  • 50ml water
  • 600ml double cream (or half and half cream and plain yoghurt)
