Ingredients

  • ¾ cup unsalted butter, at room temperature
  • 1¾ cup + 2 tablespoons superfine sugar
  • Zest of 3 lemons
  • 2 eggs
  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ cup hot water
  • ½ cup ground almonds
  • 1½ tablespoons poppy seeds
  • For the Drizzle and Topping:
  • ½ cup superfine sugar
  • Juice of 2 lemons
  • 1½ tablespoons granulated sugar
