Ingredients
- 1/3 cup uncooked quinoa, rinsed well (OR 1/3 cup panko bread crumbs, but meatballs will not be gluten-free)
- 2/3 cup water
- 1lb lean ground beef
- 1 egg, whisked
- 1 large shallot OR 1/2 small onion, grated or minced
- 2 garlic cloves, microplaned or minced
- 1 Tablespoon Worcestershire sauce
- 1/4 teaspoon dried thyme
- 1/8 teaspoon dried rosemary
- salt and pepper
- For the Honey-Balsamic BBQ Sauce:
- 1 cup balsamic vinegar
- 3/4 cup ketchup
- 1/3 cup brown sugar
- 1/4 cup honey
- 1 Tablespoon Worcestershire sauce
- 1 Tablespoon Dijon mustard
- 1/4 teaspoon garlic powder
- salt and pepper

%20too%20much%20fun!%20;%20)%3C/p%3E%3Cp%3ESunday%20we%20watched%20football%20all%20day%20and%20I%20got%20to%20practice%20making%20some%20Super%20Bowl%20eats%20before%20the%20main%20event%20in%20a%20couple%20weeks.%20Yep,%20last%20Friday%20I%20shared%20my%20favorite%20Super%20Bowl-friendly%20dips,%20bites,%20and%20crock%20pot%20recipes,%20and%20I%E2%80%99m%20continuing%20the%20fun%20this%20week%20with%20a%20couple%20more%20football-friendly%20food%20ideas.%3C/p%3E%3Cp%3EToday%20I%20am%20PUMPED%20to%20share%20gluten-free%20Honey-Balsamic%20BBQ%20Meatballs%20which%20Ben%20deemed,%20%E2%80%9Cthe%20best%20meatball%20I%E2%80%99ve%20ever%20had.%E2%80%9D%20Not%20even%20the%20best%20%E2%80%9Cgluten-free%E2%80%9D%20meatball%20he%E2%80%99s%20ever%20had%20%E2%80%93%20just%20the%20best%20meatball%20ever%20PERIOD.%20End%20of%20sentence.%20Score!%3C/p%3E%3Cp%3EMini%20meatballs%20are%20held%20together%20with%20cooked%20quinoa%20instead%20of%20bread%20crumbs%20to%20make%20them%20gluten-free,%20then%20are%20coated%20in%20a%20sticky,%20sweet-tart%20homemade%20Honey-Balsamic%20BBQ%20Sauce.%20I%E2%80%99ve%20been%20on%20a%20meatball%20bender%20since%20giving%20this%20quinoa/bread%20crumb%20swap%20a%20go%20early%20last%20week.%20I%20made%20Low-Carb%20Spaghetti%20Squash%20and%20Meatballs%20twice,%20then%20these%20sweet%20and%20tangy%20Honey-Balsamic%20BBQ%20Meatballs.%20If%20you%20liked%20my%20Honey%20and%20Balsamic%20Onions%20Chicken%20Skillet%20%E2%80%93%20you%20will%20LOVE%20these%20meatballs!%3C/p%3E%3Cp%3ELike%20I%20said,%20they%E2%80%99re%20a%20little%20tangy,%20a%20little%20sweet,%20and%20the%20cooked%20quinoa%20in%20the%20meat%20mixture%20gives%20them%20a%20great%20texture.%20They%E2%80%99re%20a%20great%20snacking%20option%20for%20the%20Super%20Bowl.%20Keep%20%E2%80%98em%20warm%20in%20a%20saucepan%20on%20the%20stove%20top%20or%20in%20a%20crock%20pot%20set%20to%20warm%20so%20guests%20can%20go%20back%20again%20and%20again%20(which%20they%20will!)%3C/p%3E%3Cp%3EStart%20by%20making%20a%20batch%20of%20thick%20and%20sticky%20homemade%20Honey-Balsamic%20BBQ%20Sauce,%20which%20is%20so%20easy%20to%20make.%20I%20sort%20of%20wanted%20to%20spoon%20drink%20this%20stuff%20it%E2%80%99s%20so%20luscious.%20Who%20knows,%20maybe%20I%20did%20%E2%80%93%20muwahaha!%3C/p%3E%3Cp%3EAnyway,%20combine%20ingredients%20including%20balsamic%20vinegar,%20honey,%20ketchup,%20Worcestershire%20sauce%20(I%20used%20Lea%20&%20Perrins,%20which%20is%20gluten-free,)%20Dijon%20mustard,%20brown%20sugar,%20salt,%20and%20pepper%20in%20a%20saucepan%20then%20bring%20to%20a%20boil.%20Lower%20the%20heat%20then%20simmer%20for%2045%20minutes.%20As%20it%20simmers,%20the%20BBQ%20sauce%20will%20thicken%20and%20sweeten%20%E2%80%93%20YUM.%3C/p%3E%3Cp%3EMeanwhile,%20rinse%201/3%20cup%20uncooked%20quinoa%20then%20cook%20it%20in%202/3%20cup%20water%20for%2010%20minutes,%20or%20until%20the%20quinoa%20is%20tender%20and%20water%20is%20absorbed.%20Fluff%20it%20with%20a%20fork%20then%20cool%20slightly.%3C/p%3E%3Cp%3ECombine%20the%20cooked%20quinoa%20with%201%20whisked%20egg,%201/2%20grated%20small%20onion%20(or%201%20large%20shallot,)%202%20microplaned%20or%20minced%20garlic%20cloves,%20and%20lots%20of%20salt%20and%20pepper.%3C/p%3E%3Cp%3EFinally%20add%20%201%20Tablespoon%20Worcestershire%20sauce,%201/4%20teaspoon%20dried%20thyme,%20and%201/8%20teaspoon%20dried%20rosemary%20then%20mix%20everything%20together.%3C/p%3E%3Cp%3EAdd%201lb%20lean%20ground%20beef%20(I%20used%2090/10)%20then%20mix%20with%20your%20hands%20and%20separate%20into%20eight%20wedges.%3C/p%3E%3Cp%3EForm%20three%20meatballs%20out%20of%20each%20wedge,%20placing%20them%20on%20a%20cooling%20rack%20sprayed%20VERY%20well%20with%20nonstick%20spray,%20set%20atop%20a%20foil-lined%20baking%20sheet.%20Do%20NOT%20skimp%20on%20the%20nonstick%20spray%20or%20you%E2%80%99ll%20be%20sorry!%20Bake%20for%2015-17%20minutes%20at%20400%20degrees.%3C/p%3E%3Cp%3EFinally,%20add%20the%20meatballs%20to%20the%20Honey-Balsamic%20BBQ%20Sauce%20then%20turn%20the%20heat%20down%20to%20low%20to%20keep%20warm.%20Alternatively,%20you%20could%20add%20the%20meatballs%20and%20sauce%20to%20a%20crock%20pot%20set%20to%20%E2%80%9Cwarm%E2%80%9D.%20(We%E2%80%99re%20ignoring%20the%20fact%20that%20my%20stove%20top%20is%20a%20literal%20hot%20mess,%20mmkay?)%3C/p%3E%3Cp%3ESet%20out%20tooth%20picks%20to%20pluck%20the%20meatballs%20from%20the%20tangy%20sauce%20with%20then%20enjoy!%3C/p%3E%3Cp%3EHoney-Balsamic%20BBQ%20Meatballs%20(Gluten-Free)%3C/p%3E%3Cp%3EMakes%2024%20meatballs%3C/p%3E%3Cp%3ESauce%20from%20BHG.com%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20meatballs:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20ingredients%20for%20Honey-Balsamic%20BBQ%20Sauce%20in%20a%20saucepan%20then%20stir%20to%20combine.%20Bring%20to%20a%20boil%20over%20medium-high%20heat,%20stirring%20every%20so%20often,%20then%20reduce%20heat%20and%20simmer%20for%2045%20minutes%20or%20until%20sauce%20is%20thick%20and%20has%20lost%20its%20vinegary%20bite,%20stirring%20every%20so%2
