Goat Cheese, Pimiento, Spinach Tarts Recipe

Ingredients

  • 4oz (120gr) drained pimentos or roasted red peppers, sliced
  • 2oz (60gr) frozen spinach, thawed, squeezed dry
  • 1/4 cup Greek olives, pitted, cut in thirds
  • 1 tsp dried oregano
  • 1 tsp chives
  • 1/2 tsp paprika
  • 2 tbs grated Parmesan cheese
  • olive oil
  • Sprinkle Parmesan evenly, in a circle, leaving about an inch clear around the edges
