Fried Potatoes Recipe

Hearty, filling, and delicious. This simple meal is favored in our house, and always welcome on a cold Alaskan night.

Ingredients

  • About 3 pounds potatoes, diced, blanched, and well drained
  • 1 pound smoked sausage, sliced as thick as you like it
  • 1 large onion, chopped
  • salt and pepper to taste (we are heavy handed with the pepper)
  • a touch of oil (though we sometimes use butter)

Directions

  1. Heat oil in skillet (preferably cast iron) on medium.
  2. Add all remaining ingredients.
  3. Fry (stirring occasionally) until potatoes are tender.
  4. Cook time varies depending on heat of skillet and preference for tenderness of potatoes. I usually give it a little longer in order to get a crispy edge.
