  • 3 pounds ripe plum tomatoes
  • 2 scant cups cubed day-old crusty bread
  • 2/3 cup water
  • 1/3 cup plus 2 tablespoons olive oil
  • 2 garlic cloves, peeled and smashed with blade of a knife
  • Kosher salt
  • 1 onion, finely chopped
  • 2 teaspoons sugar
  • Freshly ground black pepper
  • Handful fresh basil leaves, torn or roughly chopped
