Ingredients

  • 2 tablespoons unsalted butter
  • 1/3 cup finely chopped mushrooms
  • 1/3 cup finely chopped shallots (1 large shallot)
  • 4 cups peeled and diced butternut squash, into 3/4″ pieces
  • 1 1/2 teaspoon freshly grated ginger root
  • 1/4 cup vegetable broth
  • 1 teaspoon finely chopped fresh thyme
  • 2 cups thinly sliced apple (unpeeled)
  • 2 tablespoons dried cherries
  • 1/2 teaspoon kosher salt
  • For the Crumble
  • 1/4 cup all-purpose flour
  • 1/4 cup oats
  • 1 tablespoon brown sugar
  • 1 tablespoon fig jam (or just add another tablespoon brown sugar)
  • 1 teaspoon thyme
  • 1/2 teaspoon kosher salt
  • Pinch ground ginger
  • 4 tablespoons unsalted butter
