Ingredients

  • 1 1/4 cups shelled edamame (that’s about 1/2 of a 1 lb bag)
  • 1-1 1/2 tablespoons tahini
  • 3/4 teaspoon minced garlic
  • 3 teaspoons extra virgin olive oil, divided (I recommend this or this)
  • 1 1/2-2 tablespoon lemon juice
  • 1/4 teaspoon kosher salt, plus more to taste
  • a few cracks black pepper
  • 3-4 tablespoons water
  • 2-3 tablespoons diced roasted red bell pepper (click here to make your own)
  • toasted sesame seeds (plain or black)
