Drunken Chicken, your easy dinner solution.

This is a take on a traditional drunken chicken recipe where whole chicken breasts are marinated over night. In this instance I am using chicken strips, which are perfect for a quick marinade and quick cooking.
We like things quick and tasty around here. I am sure you do too.
For me this dish makes a perfect Sunday night dinner. It’s a simple case of throwing the ingredients together to leave it to marinate, and then a very easy cooking process. Perfect way to end a lazy weekend.

%20Cuisine:%20Chinese%20Serves:%202%20%20%20Ingredients%3C/p%3E%3Cp%3E300g%20chicken%20breast%20strips%20125ml%20(1/2%20cup)%20Shao%20Shing%20Chinese%20cooking%20wine%2020g%20ginger,%20finely%20julienned%201%20tablespoon%20soy%20sauce%202.5g%20(1/2%20teaspoon)%20caster%20(fine)%20sugar%20%20%20Instructions%3C/p%3E%3Cp%3EIn%20a%20medium%20ceramic%20or%20plastic%20bowl%20place%20cooking%20wine,%20ginger,%20soy%20sauce%20and%20sugar.%20Give%20it%20a%20stir%20and%20then%20add%20the%20chicken%20breast%20strips,%20coat%20well.%20Leave%20chicken%20to%20marinade%20in%20the%20fridge%20for%20at%20least%202%20hours,%20even%20better%20if%20left%20over%20night.%20When%20ready%20to%20cook,%20strain%20chicken%20and%20ginger%20from%20the%20marinade.%20Reserve%20the%20marinade!%20Place%20reserved%20marinade%20in%20a%20small%20saucepan.%20In%20a%20wok%20or%20pan,%20place%201%20tablespoon%20of%20vegetable%20oil.%20Over%20a%20low%20heat%20cook%20the%20chicken%20until%20cooked%20through.%20You%20don%E2%80%99t%20want%20to%20brown%20the%20chicken,%20cook%20slowly%20to%20keep%20it%20tender.%20The%20chicken%20should%20look%20pale%20in%20appearance.%20While%20cooking%20the%20chicken,%20heat%20saucepan%20with%20the%20marinade%20on%20the%20stovetop.%20Bring%20the%20sauce%20to%20a%20rapid%20boil%20and%20remove%20from%20the%20heat.%20Strain%20the%20sauce.%20The%20chicken%20juices,%20that%20have%20leached%20whilst%20marinating%20will%20coagulate%20on%20cooking,%20and%20not%20look%20very%20pretty,%20you%20want%20to%20remove%20that%20from%20your%20sauce.%20Place%20chicken%20on%20a%20serving%20dish%20and%20cover%20with%20the%20strained%20sauce.%20Feel%20free%20to%20garnish%20with%20some%20spring%20onion%20(green%20onion)%20and%20finely%20sliced%20chilli.%20Serve%20immediately%20with%20steamed%20rice.%20%203.5.3208%3C/p%3E%3Cp%3EI%20have%20also%20made%20this%20drunken%20chicken%20and%20made%20sandwiches/rolls.%20Using%20crunchy%20long%20rolls%20from%20the%20bread%20shop,%20I%20load%20them%20with%20the%20chicken,%20spring%20onion,%20coriander%20(cilantro),%20chili%20and%20lettuce.%20Then%20just%20add%20a%20little%20drizzle%20of%20the%20sauce%20over%20the%20filling.%20A%20quick%20and%20easy%20alternative%20if%20you%20don%E2%80%99t%20feel%20like%20rice%20and%20want%20to%20add%20a%20bit%20more%20veg%20to%20the%20dish.%3C/p%3E%3Cp%3ESara%20xxx%3C/p%3E){kind=link}
