  • 1 lrg brick of Velveeta cheese
  • 2 can Rotel tomatoes
  • 1 lb grnd beef

Directions

  1. Preparing the queso:Slice and cube the box of Velveeta, then place it into a crock pot, heat this on high stirring occasionally till the cheese is melted.
  2. Place the grnd beef into a skillet and cook over medium heat till browned.
  3. Drain the meat well.
  4. Open the 2 cans of Rotel tomatoes and place them into a small food chopper, cut till the tomatoes are very fine.
  5. Pour the meat and Rotel tomatoes into the crock pot with the melting cheese and continue stirring once in awhile till the cheese is totally melted.
  6. Serving Suggestions:This cheese dip is wonderful over tortilla chips, but can be put a top anything which you like cheese on. Try it over a hamburger instead of sliced cheese. You can make a whole meal of it by preparing a large bag of elbow noodles, drain thoroughly and top with the queso.
  7. **Note** If you do not have a crock pot, you can heat the cheese in a large silverstone sauce pan over medium heat. Keep a very close eye on it though, it will scorch is not stirred frequently.
