.%20The%20latest%20one%20is%20Mom%E2%80%99s%20Big%20Book%20of%20Cookies.%20I%20confess%20that%20Chattman%E2%80%99s%20books%20are%20not%20what%20I%20would%20be%20attracted%20to%20on%20the%20surface%20normally.%20A%20friend%20of%20mine%20summed%20it%20up%20well%E2%80%93her%20books%20look%20great%20for%20the%20beginning%20baker%20that%20she%20was%2010%20years%20ago,%20but%20maybe%20not%20so%20much%20now.%20However,%20I%20have%20found%20that%20Chattman%E2%80%99s%20genius%20lies%20not%20just%20in%20her%20simplicity,%20but%20in%20the%20novelty%20of%20her%20simplicity.%20These%20cookies%20are%20a%20perfect%20example.%20There%20is%20nothing%20difficult%20about%20them%E2%80%93if%20you%20can%20make%20chocolate%20chip%20cookies%20you%20can%20obviously%20make%20these.%20But%20it%20just%20never%20would%20have%20occurred%20to%20me%20to%20put%20Rice%20Krispies%20in%20chocolate%20chip%20cookies.%3C/p%3E%3Cp%3ESpeaking%20of%20Rice%20Krispies,%20they%20are%20a%20weakness%20of%20mine.%20I%20love%20texture,%20and%20crispiness%20is%20one%20of%20my%20favorites.%20They%20are%20such%20a%20weakness,%20in%20fact,%20that%20I%20rarely%20bake%20with%20puffed%20rice.%20Entire%20pans%20of%20Rice%20Krispy%20Treats%20have%20been%20known%20to%20vanish%20under%20my%20supervision%20in%20less%20than%20a%20day.%20Which%20is%20why%20I%20knew%20I%20had%20to%20try%20this%20cookie%20when%20I%20saw%20it%E2%80%93and%20why%20I%20might%20not%20try%20it%20again.%3C/p%3E%3Cp%3EWeirdly,%20these%20cookies%20are%20not%20that%20great%20when%20they%20first%20come%20out%20of%20the%20oven.%20Good,%20certainly,%20but%20they%20seemed%20kind%20of%20gimmicky.%20However,%20in%20marked%20contrast%20to%20any%20other%20chocolate%20chip%20cookies%20recipe%20I%20am%20familiar%20with,%20later%20that%20night%20they%20were%20fantastic.%20Chewy%20and%20crispy.%20My%20husband%20and%20I%20could%20not%20keep%20out%20of%20them,%20even%20on%20day%203%20(by%20which%20point%20there%20were%20only%20a%20few%20left).%20The%20kids%20also%20pronounced%20them%20%E2%80%9Cdelicio-SO!%E2%80%9D%20(Alex%E2%80%99s%20latest%20compliment%20for%20food;%20she%20is%20obsessed%20with%20Spanish%20words).%3C/p%3E%3Cp%3ECrispy%20Chocolate%20Chip%20Cookies%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Lauren%20Chattman,%20Mom%E2%80%99s%20Big%20Book%20of%20Cookies%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Line%202%20baking%20sheets%20with%20parchment%20paper%20or%20silicone%20baking%20mats.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20soda%20and%20salt%20in%20a%20medium%20size%20mixing%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20the%20cooled%20butter%20and%20sugars%20together%20(this%20can%20be%20done%20by%20hand%20or%20with%20a%20mixer%20at%20this%20point).%20Add%20the%20egg%20and%20vanilla%20and%20beat%20until%20smooth.%20Stir%20in%20the%20flour%20mixture%20until%20the%20flour%20is%20mostly%20incorporated.%20Add%20the%20chips%20and%20stir%20until%20the%20flour%20and%20chips%20are%20completely%20incorporated.%3C/p%3E%3Cp%3ESwitching%20to%20stirring%20by%20hand,%20add%20the%20Rice%20Krispies%20and%20stir%20and%20fold%20until%20the%20Krispies%20are%20evenly%20distributed,%20taking%20care%20not%20to%20break%20the%20rice%20puffs.%20Cover%20the%20dough%20with%20wax%20paper%20and%20place%20in%20the%20fridge%20for%20anywhere%20from%2010%20minutes%20to%206%20hours%20(I%20did%20about%203-4%20hours).%3C/p%3E%3Cp%3EDrop%20the%20dough%20by%20the%20heaping%20tablespoon%20onto%20the%20baking%20sheets,%20leaving%20about%203%20inches%20between%20cookies.%20You%20could%20also%20freeze%20the%20dough%20at%20this%20point%20and%20bake%20later.%20I%20got%20approximately%2024%20cookies%20from%20the%20recipe.%20Bake%20the%20cookies%20until%20they%20are%20golden%20around%20the%20edges%20but%20still%20soft%20and%20slightly%20under-done%20in%20the%20middle,%2010-12%20minutes%20(expect%201-2%20minutes%20longer%20for%20frozen%20balls%20of%20dough).%20Let%20the%20cookies%20cool%20an%20additional%205%20minutes%20on%20the%20sheets,%20then%20transfer%20them%20to%20a%20cooling%20rack.%20If%20you%20bake%20both%20sheets%20at%20once%20be%20sure%20to%20rotate%20them%20top%20to%20bottom%20and%20front%20to%20back%20halfway%20through.%3C/p%3E){kind=link}
