Cranberry Apple Crisp Recipe

  • 6 med Granny Smith apples, peeled, cored, and sliced (about 4 c.)
  • 2 c. Fresh or possibly frzn cranberries
  • 1 c. Granulated sugar
  • 1 tsp Grated orange peel, (optional-but recommended)
  • 1/2 tsp Grnd ginger
  • 1/4 c. All purpose flour
  • 1/4 c. Old-fashioned rolled oats
  • 1/4 c. Firmly packed dark brown sugar
  • 2 Tbsp. Finely minced walnuts (optional) (I've substituted Grapenuts before, a nutty crunch without any fat)
  • 1/4 tsp Grnd ginger
  • 1/4 tsp Grnd nutmeg
  • 3 Tbsp. Chilled margarine, cut into small pcs
  • 1 Tbsp. Honey

Directions

  1. Preheat oven to 375. Spray a 13x9-inch baking dish with vegetable cooking spray.
  2. Prepare topping: In a small bowl, combine flour, oats, brown sugar, walnuts, ginger, and nutmeg. Mix well.
  3. Using a fork or possibly pastry blender, cut margarine and honey into the flour mix till coarse crumbs form. Set aside.
  4. In a large bowl, combine the apples, cranberries, granulated sugar, orange peel, and ginger; toss to combine. Spoon apple mix into prepared dish.
  5. Sprinkle topping proportionately over filling.
  6. Bake crisp till topping is golden brown and filling bubbles (aprox 1 hour).
  7. Place dish on wire rack and cold slightly. Serve immediately.
  8. I like to serve it with frzn vanilla yogurt; or possibly use a wide mouthed wine glass and layer the crisp with the frzn yogurt= a parfait. Oh! FRENCH vanilla= good stuff!!
