Ingredients
- Cold-Oven Cream Cheese Pound Cake
- Closely adapted from Cake Keeper Cakes, Lauren Chattman
- 3 cups (330 g) cake flour
- 1 1/2 t baking powder
- 1 t salt
- 1 cups (2 sticks) unsalted butter, room temperature
- 8 oz cream cheese, room temperature
- 2 1/2 cup superfine sugar
- 6 large eggs, room temperature
- 1 T vanilla
- 1 T lemon zest
- 1 1/2 T grated fresh ginger, optional (I left out)

,%20which%20means%20if%20I%20want%20to%20try%20it,%20it%20is%20probably%20going%20to%20be%20at%20my%20house.%20Which%20means%20I%20will%20eat%20it.%20All%20of%20it.%20Not%20at%20once%20of%20course,%20but%20still.%20So%20I%20like%20baking%20cakes%20to%20bring%20to%20other%20people%E2%80%99s%20homes%E2%80%93I%20get%20to%20bake%20the%20cake%20(and%20I%20love%20making%20cakes,%20especially%20bundt%20cakes),%20I%20get%20to%20try%20the%20cake,%20and%20other%20people%20hopefully%20get%20to%20finish%20the%20cake%20(although%20in%20this%20case%20I%20do%20believe%20it%20is%20John%E2%80%99s%20students%20who%20will%20be%20finishing%20the%20cake%20since%20we%20only%20ate%20about%20half%20of%20the%20cake%20at%20book%20club).%3C/p%3E%3Cp%3EI%E2%80%99d%20been%20eyeballing%20this%20bundt%20cake%20since%20receiving%20Cake%20Keeper%20Cakes%20because%20I%20was%20fascinated%20by%20the%20cold%20oven%20method,%20which%20allows%20the%20cake%20to%20rise%20even%20further.%20As%20a%20result%20the%20cake%20is%20lighter%20(seeming)%20than%20other%20pound%20cakes,%20not%20quite%20so%20dense.%20It%20is%20moist%20but%20not%20super%20moist.%20Actually%20this%20would%20be%20a%20nice%20cake%20for%20a%20simple,%20quick%20warm%20cake%20lemon%20glaze,%20although%20it%20was%20good%20without%20it.%20I%20also%20liked%20the%20crust%20on%20this%20cake%E2%80%93not%20all%20pound%20cakes%20crust%20nicely,%20although%20I%20have%20not%20completely%20decided%20the%20reason%20for%20this,%20and%20this%20one%20did.%20Chattman%20says%20the%20extra%20time%20for%20rises%20also%20translates%20to%20extra%20time%20for%20developing%20a%20nice%20crust.%20The%20dark%20golden%20true%20crust%20is%20much%20more%20appetizing%20than%20a%20cake%20where%20the%20outside%20is%20the%20almost%20the%20same%20color%20as%20the%20outside.%3C/p%3E%3Cp%3EA%20quick%20word%20about%20photos:%20it%20turns%20out%20not%20everyone%20designs%20their%20kitchen%20around%20the%20concept%20of%20having%20bright%20light%20for%20phoographng%20food.%20Who%20knew?%20So%20please%20excuse%20the%20sliced%20cake%20pictures;%20the%20hostess%20very%20graciously%20allowed%20me%20to%20get%20there%20early%20to%20take%20pictures%20of%20the%20sliced%20cake,%20but%20the%20lighting%20was%20very%20tasteful%20and%20warm%E2%80%93which%20meant%20I%20probably%20looked%20great%20but%20my%20cake%20pictures%20not%20so%20much.%3C/p%3E%3Cp%3ECold-Oven%20Cream%20Cheese%20Pound%20Cake%3C/p%3E%3Cp%3EAdjust%20the%20oven%20rack%20to%20the%20lower%20middle%20position.%20Spray%20a%2012%20cup%20bundt%20pan%20with%20a%20grease/flour%20combo%20such%20as%20Baker%E2%80%99s%20Joy%20(or%20do%20it%20yourself).%20Set%20aside.%3C/p%3E%3Cp%3EThoroughly%20whisk%20together%20the%20flour,%20salt%20and%20baking%20powder.%20Set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20cream%20cheese%20for%2030%20seconds%20on%20medium%20speed%20until%20it%20is%20quite%20creamy.%20Add%20the%20butter%20and%20cream%20for%201%20minute%20on%20medium%20speed,%20until%20the%20butter%20and%20cream%20cheese%20are%20completely%20blended.%20With%20the%20mixer%20running%20on%20medium%20high,%20slowly%20add%20the%20sugar%20and%20beat%20until%20fluffy,%203-4%20minutes.%20Scrape%20down%20the%20sides%20of%20the%20bowl%20at%20regular%20intervals.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20medium%20speed%20add%20the%20eggs,%20one%20at%20a%20time,%20scraping%20down%20the%20sides%20of%20the%20bowl%20after%20each%20addition.%20After%20the%20last%20egg,%20add%20the%20vanilla,%20lemon%20zest%20and%20ginger%20(if%20using).%20Beat%20for%2030%20more%20seconds.%3C/p%3E%3Cp%3ETurn%20the%20mixer%20down%20to%20low%20and%20add%20the%20flour%20in%205%20additions,%20scraping%20down%20the%20sides%20of%20the%20bowl%20after%20each%20addition.%20After%20the%20last%20addition,%20beat%20the%20batter%20on%20medium%20speed%20for%2030%20seconds.%20Scrape%20the%20batter%20into%20the%20prepared%20bundt%20pan,%20smoothing%20the%20top%20out%20when%20finished.%20place%20the%20pan%20in%20the%20cold%20oven.%20Turn%20the%20temperature%20to%20325%20F%20and%20bake%20for%2065-80%20minutes%E2%80%93do%20not%20open%20the%20oven%20until%20after%20the%201%20hour%20mark%20(to%20check%20for%20doneness).%20The%20cake%20is%20done%20when%20it%20is%20golden%20brown%20and%20a%20cake%20tester%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20the%20cake%20in%20the%20pan%20for%2015%20minutes.%20Then%20invert%20it%20onto%20a%20cooling%20rack%20and%20cool%20completely%20before%20serving%20(I%20made%20my%20cake%2024%20hours%20in%20advance%20and%20just%20kept%20it%20well%20wrapped%20in%20an%20airtight%20cake%20keeper).%3C/p%3E){kind=link}
