Ingredients
- 28 chocolate fudge sandwich cookies
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter
- 1 1/2 cups very ripe, peeled and mashed, bananas (about 4 medium)
- 1 teaspoon lemon juice
- 11.5 oz jar Smuckers Salted Caramel Topping (or your favorite caramel topping)

%3C/p%3E%3Cp%3EIt%20may%20seem%20like%20an%20unusual%20dessert,%20but%20if%20you%20think%20about%20it,%20all%20of%20the%20flavors%20are%20perfect%20together.%20%20Banana,%20chocolate%20and%20caramel.%20%20Banana%20cake,%20chocolate%20cookies%20and%20caramel%20sauce.%20%20I%20do%20not%20recommend%20Oreo%20cookies,%20but%20rather%20the%20old%20fashioned%20chocolate%20fudge%20sandwich%20cookies%20instead.%20%20In%20other%20words,%20buy%20the%20cheap%20cookies.%20%20You%20want%20the%20more%20mild%20chocolate%20taste%20so%20not%20to%20overpower%20the%20rest%20of%20the%20cake.%20%20I%20used%20the%20cheap%20%E2%80%9CPsst%E2%80%9D%20brand%20of%20chocolate%20fudge%20sandwich%20cookies%20from%20Kroger.%3C/p%3E%3Cp%3EYou%20treat%20this%20much%20like%20an%20upside%20down%20cake.%20%20Pour%20the%20banana%20cake%20batter%20into%20the%20pan,%20top%20with%20a%20layer%20of%20cookies,%20then%20bake.%20%20After%20it%20cools%20for%20about%2020%20minutes,%20flip%20it%20over%20on%20a%20serving%20platter%20so%20the%20cookies%20are%20on%20the%20bottom.%3C/p%3E%3Cp%3EThen%20take%20your%20caramel%20topping%20(I%20used%20and%20LOVED%20the%20new%20Salted%20Caramel%20Topping%20from%20Smuckers)%20and%20spread%20it%20evenly%20over%20top,%20slice%20and%20EAT!%20%20Eat%20it%20warm%20or%20at%20room%20temperature.%20%20Maybe%20even%20with%20a%20scoop%20of%20ice%20cream!%20%20I%20have%20no%20idea%20how%20you%20should%20store%20it%20because%20our%20leftovers%20were%20sent%20over%20to%20our%20neighbors.%20%20(I%E2%80%99m%20guessing%20you%20might%20want%20to%20refrigerate.)%20%20;)%3C/p%3E%3Cp%3EChocolate%20Sandwich%20Cookie%20Banana%20Cake%20with%20Salted%20Caramel%20Topping%3C/p%3E%3Cp%3EThis%20banana%20cake%20is%20baked%20with%20chocolate%20sandwich%20cookies%20then%20inverted%20onto%20a%20serving%20platter%20and%20topped%20with%20a%20thick%20salted%20caramel%20sauce.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20Generously%20grease%20two%20round%20cake%20pans%20with%20nonstick%20baking%20spray%20(I%20recommend%20Baker's%20Joy).%3C/p%3E%3Cp%3EPlace%2014%20of%20the%20sandwich%20cookies%20into%20each%20cake%20pan%20in%20a%20single%20layer;%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20flour,%20salt,%20baking%20soda%20and%20baking%20powder;%20set%20aside.%20Using%20either%20a%20stand%20mixer%20or%20a%20food%20processor,%20place%20the%20eggs%20and%20sugar%20in%20the%20work%20bowl%20and%20process/mix%20about%201%20minute.%20Add%20the%20butter%20and%20process/mix%20until%20the%20butter%20is%20thoroughly%20combined%20with%20the%20eggs%20and%20sugar.%20Stir%20in%20the%20banana%20and%20lemon%20juice,%20process/mix%20until%20blended.%20Add%20the%20flour%20mixture%20and%20stir/pulse%20just%20until%20dry%20ingredients%20almost%20disappear.%3C/p%3E%3Cp%3EPour%20the%20batter%20evenly%20divided%20into%20the%20two%20cake%20pans,%20over%20top%20the%20sandwich%20cookies.%20Spread%20so%20the%20mixture%20is%20level.%20Carefully%20place%20in%20the%20oven%20and%20bake%20for%2018-22%20minutes,%20or%20until%20a%20toothpick%20inserted%20into%20the%20middle%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20let%20cool%20for%2020%20minutes.%20Invert%20onto%20a%20serving%20platter%20so%20the%20cookies%20are%20on%20the%20bottom%20of%20the%20cake.%20Spread%20half%20of%20the%20caramel%20topping%20evenly%20over%20one%20cake,%20repeat%20with%20the%20remaining%20caramel%20topping%20over%20the%20second%20cake.%3C/p%3E%3Cp%3EServe%20immediately.Notes%3C/p%3E%3Cp%3EIf%20you%20do%20not%20need%20two%20cakes,%20only%20use%20half%20the%20batter%20to%20make%20one%20cake%20while%20using%20the%20other%20half%20of%20the%20batter%20to%20make%20separate%20banana%20bread%20loaves%20or%20muffins.%3C/p%3E%3Cp%3E2.2%3C/p%3E%3Cp%3Ehttp://www.seededatthetable.com/2014/06/27/chocolate-sandwich-cookie-banana-cake-with-salted-caramel-topping/%3C/p%3E%3Cp%3ECopyright%20Seeded%20at%20the%20Table%3C/p%3E){kind=link}
