- Soup
- 3 tablespoons olive oil
- 1 tablespoon butter
- 3 tablespoons garlic, minced
- 1 jalapeno, minced
- 2 cups onion, diced
- 2 cups carrot, sliced
- 2 cups zucchini, sliced
- 2 cups green bell pepper, diced
- 2 cups frozen corn kernels
- 10-11 cups chicken stock
- 28 oz can diced tomatoes
- 15 oz can tomato sauce
- 1/2 cup canned roasted green chilis
- 1/4 cup fresh squeezed lime juice (2-3 limes)
- Garnish
- Monterey jack cheese, shredded

%20streaming%20in.%20%20No%20complaints.%20%20The%20condo%20is%20beautiful%20too.%20And%20the%20kitchen,%20OH,%20the%20kitchen!%20%20Mahogany%20cupboards,%20marble%20counter%20tops...%20and%20all%20new%20appliances.%20%20Pinch%20me,%20I'm%20in%20post-grad%20foodie%20heaven!%3C/p%3E%3Cp%3ESadly,%20I%20feel%20like%20it%20will%20take%20a%20while%20for%20me%20to%20get%20up%20and%20running%20in%20the%20kitchen%20at%20my%20new%20place.%20%20I%20have%20a%20few%20recipes%20that%20I%20made%20in%20Michigan%20that%20have%20yet%20to%20be%20posed,%20this%20being%20one%20of%20them.%20%20As%20most%20of%20you%20know,%20I%20started%20eating%20chicken%20at%20the%20beginning%20of%20the%20summer.%20%20It%20was%20a%20hard%20decision%20to%20make,%20but%20has%20vastly%20improved%20my%20health.%20%20Once%20I%20got%20comfortable%20with%20the%20idea%20of%20eating%20meat,%20I%20slowly%20began%20to%20cook%20more%20with%20it.%20%20I'm%20still%20a%20little%20uneasy%20when%20working%20with%20a%20raw%20breast%20of%20chicken,%20but%20hopefully%20that%20will%20subside%20with%20time.%20%20This%20chicken%20tortilla%20soup%20requires%20a%20shredded%20rotisserie%20chicken,%20some%20vegetables,%20spices%20and%20stock.%20%20The%20pot%20that%20I%20used%20wasn't%20large%20enough%20for%20all%20the%20stock,%20so%20I%20gradually%20refilled%20the%20soup%20stored%20in%20the%20fridge%20with%20a%20little%20bit%20of%20stock.%20%20Best%20part%20about%20this%20soup%20(other%20than%20that%20it%20tastes%20wonderful?)%20it%20that%20it%20heats%20up%20well%20and%20stores%20for%20a%20good%20length%20of%20time%20in%20the%20fridge.%3C/p%3E%3Cp%3EChicken%20Tortilla%20Soup%3C/p%3E%3Cp%3ESeasoning%20mix%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20dry%20seasoning,%20mix%20and%20set%20aside.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20and%20butter%20in%20a%20stockpot.%20Add%20a%20third%20of%20the%20onion,%20garlic%20and%20seasoning%20mix%20and%20sweat.%20After%207%20minutes,%20add%20another%20third%20of%20the%20onions,%20garlic%20and%20seasoning%20mix%20and%20cook%20for%20another%207%20minutes%20while%20stirring.%20Add%20the%20remaining%20onion,%20garlic%20and%20seasoning%20mix%20and%20cook%20for%207%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20carrots%20and%20bell%20pepper%20and%20cook%20for%20another%2010%20minutes,%20stirring%20occasionally.%3C/p%3E%3Cp%3EAdd%20the%20canned%20tomatoes,%20chicken%20stock%20and%20tomato%20sauce%20and%20stir.%20Cook%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20corn,%20shredded%20chicken,%20zucchini,%20black%20olives,%20green%20chiles%20and%20stir%20to%20combine.%20Cook%20for%20another%2025%20minutes%20on%20medium%20heat.%3C/p%3E%3Cp%3EAdd%20the%20lime%20juice%20and%20stir.%3C/p%3E%3Cp%3ETo%20serve,%20ladle%20about%201%20cup%20of%20soup%20into%20a%20warm%20bowl,%20sprinkle%20with%20cilantro%20sprigs,%20cheese,%20crushed%20corn%20chips,%20a%20dollop%20of%20sour%20cream%20(if%20desired)%20and%20a%20healthy%20squeeze%20of%20lime%20juice.%3C/p%3E){kind=link}
