Ingredients

  • 13 oz box penne pasta - I used whole grain
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 Tb olive oil
  • 2 - 15 ounce cans Del Monte® Diced Tomatoes with the flavors of Basil, Garlic, & Oregano
  • 1/4 tsp red pepper flakes (or more if you like spicy pasta)
  • 1 lb fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 ounces mozzarella cheese, diced into small cubes
  • 1 C freshly grated parmesan cheese
