%20,%20things%20like%20Christmas%20cookies%20must%20go%20on.%20So%20despite%20the%20fact%20that%20I%20have%20been%20having%20trouble%20sleeping%20and%20just%20generally%20feeling%20kind%20of%20numb%20with%20horror,%20I%20made%20a%20batch%20of%20vanilla%20M&M%20marshmallows%20tonight%20for%20Sammy%E2%80%99s%20Holiday%20Party%20on%20Friday%20at%20school.%20I%20am%20also%20planning%20to%20get%20caramels%20done%E2%80%93I%20hope%E2%80%93for%20the%20teachers.%20And%20maybe%20a%20cookie%20for%20Sammy%E2%80%99s%20party%20also.%20And%20when%20it%20feels%20kind%20of%20silly%20and%20artificial%20compared%20to%20what%20other%20parents%20are%20contending%20with%20this%20season,%20I%20remind%20myself%20that%20I%20am%20so%20grateful%20for%20my%20children%20and%20for%20the%20opportunity%20to%20give%20them%20a%20wonderful%20Christmas%20experience.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20I%20apparently%20bought%20way%20too%20cool%20of%20a%20toy%20for%20Sammy%20to%20give%20to%20Toys%20For%20Tots%20(Disney%20Princess%20Squinkies),%20and%20she%20fell%20in%20love%20with%20it.%20Now%20don%E2%80%99t%20get%20me%20wrong,%20she%20never%20once%20suggested%20keeping%20it,%20she%20was%20very%20excited%20to%20donate%20to%20a%20child%20who%20might%20not%20otherwise%20get%20anything%20(although%20she%20was%20confused%20about%20that%20since%20we%20do%20believe%20in%20Santa%20in%20this%20house;%20we%20told%20her%20Santa%20sometimes%20needs%20help).%20But,%20when%20I%20tried%20to%20warn%20her%20that%20maybe%20Santa%20did%20not%20know%20she%20liked%20this%20toy%20(I%20only%20just%20bought%20it%20and%20did%20not%20think%20I%20would%20have%20time%20to%20again%20leave%20my%20small%20town%20to%20go%20shopping),%20she%20told%20me%20Santa%20can%20do%20anything%20and%20this%20was%20between%20her%20and%20Santa%20(I%20think%20there%20was%20an%20implied%20%E2%80%9CButt%20out!%E2%80%9D%20at%20the%20end%20of%20that!).%20I%20am%20torn%20between%20laughing%20hysterically,%20loving%20that%20her%20sense%20of%20Christmas%20magic%20is%20so%20strong,%20and%20thinking%20oh%20sh*t%20I%20gotta%20run%20to%20Costco%20tomorrow.%20In%20between%20caramels%20and%20cookies.%20And%20it%20is%20an%20hour%20away.%20Alas.%3C/p%3E%3Cp%3EBut%20she%20did%20not%20ask%20for%20much%20this%20year%20(we%20don%E2%80%99t%20watch%20commercials%20or%20even%20much%20TV%20so%20my%20kids%20are%20usually%20clueless%20as%20to%20the%20latest%20greatest%20toys)%20so%20I%20cannot%20bear%20to%20disappoint%20her.%3C/p%3E%3Cp%3ESo%20about%20these%20cookies%E2%80%A6%20These%20cookies%20started%20with%20a%20Martha%20Stewart%20recipe%20my%20mom%20and%20I%20made%20during%20our%20first%20cookie%20baking%20day%20a%20few%20weeks%20ago.%20We%20tinkered%20slightly,%20but%20mostly%20made%20them%20as%20directed.%20I%20did%20not%20have%20a%20pizza%20wheel%20though%20and%20the%20end%20result%20was%20a%20delicious%20mess%20that%20was%20perfect%20at%20the%20edges%20and%20under-baked%20in%20the%20center.%20I%20had%20to%20re-bake%20all%20of%20the%20center%20cookies,%20once%20they%20were%20sliced.%20Also,%20I%20have%20mentioned%20before%20that%20I%20am%20a%20bit%20picky%20when%20it%20comes%20to%20holiday%20cookies%20and%20how%20they%20look%20and%20I%20just%20could%20not%20get%20over%20the%20ragged,%20crumbly%20edges.%20And%20I%20also%20did%20not%20see%20why%20they%20would%20not%20work%20as%20an%20icebox%20cookie,%20simplifying%20everything.%20So%20I%20made%20a%20triple%20batch%20of%20the%20dough,%20rolled%20them%20into%20logs,%20and%20put%20them%20in%20the%20freezer%20while%20we%20ate%20the%20ugly%20first%20batch.%3C/p%3E%3Cp%3EWhen%20my%20mom%20came%20back%20for%20round%202%20of%20baking,%20I%20sliced%20and%20baked%20off%20one%20of%20the%20logs.%20It%20worked%20perfectly.%20I%20did%20not%20get%20around%20to%20finishing%20the%20remaining%20logs%20until%20this%20past%20weekend,%20but%20it%20was%20mindlessly%20cathartic%20and%20resulted%20in%20a%20delicious%20and%20attractive-in-a-rustic-way%20cookie.%20Perfect%20for%20holiday%20baking%20and%20a%20definite%20repeater.%3C/p%3E%3Cp%3EOne%20note%20about%20the%20cardamom:%20ground%20cardamom%20is%20a%20spice%20that%20fades%20quickly%20with%20time.%20So%20do%20not%20hesitate%20to%20add%20more%20cardamom%20to%20the%20recipe.%20You%20don%E2%80%99t%20want%20it%20to%20be%20out%20of%20control%20of%20course,%20but%20you%20do%20want%20to%20notice%20the%20cardamom,%20it%20really%20turns%20this%20shortbread-like%20cookie%20into%20something%20special%20and%20unique.%20Similarly,%20I%20think%20the%20coarse%20gold%20sparkling%20sugar%20really%20adds%20a%20special%20oomph%20to%20the%20cookie%20for%20the%20holidays%20and%20is%20worth%20searching%20out.%3C/p%3E%3Cp%3ECardamom%20Pistachio%20Icebox%20Cookies%3C/p%3E%3Cp%3EAdapted%20from%20Martha%20Stewart%3C/p%3E%3Cp%3EBeat%20butter,%20sugar%20and%201%201/2%20teaspoons%20cardamom%20together%20until%20creamy%20and%20combined.%20Add%20egg%20yolk%20and%20vanilla,%20scrape%20sides%20and%20bottom%20of%20bowl,%20and%20beat%20until%20pale%20and%20fluffy,%20about%202%20minutes.%20Reserve%20the%20egg%20white%20in%20the%20fridge.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour%20and%20salt.%20Add%20to%20the%20butter%20mixture%20and%20mix%20on%20lowest%20speed.%20When%20barely%20combined,%20sniff%20the%20dough.%20If%20you%20cannot%20smell%20the%20cardamom,%20add%20more,%20sprinkling%201/2%20teaspoon%20at%20a%20time,%20until%20you%20can%20tell%20the%20cardamom%20is%20present.%20It%20should%20not%20be%20overwhelming%20but%20nor%20should%20it%20be%20undetectable.%20Mix%20just%20until%20the%20dough%20is%20combined.%20Chill%20for%2030%20minutes.%3C/p%3E%3Cp%3ERemove%20dough%20from%20the%20fridge%20and%20shape%20it%20into%20a%20log%20on%20plastic%20wrap.%20Then%20roll%20it%20into%20a%20cylinder%20wrapped%20snugly%20with%20plastic%20wrap.%20A%20trick%20to%20help%20it%20keep%20its%20shape%20is%20to%20place%20the%20log%20inside%20of%20a%20slit%20paper%20towel%20roll,%20but%20I%20was%20out.%20Let%20it%20chill%20until%20firm%20enough%20to%20slice,%20probably%20overnight%E2%80%93I%20froze%20mine%20first.%3C/p%3E%3Cp%3EWhen%20ready%20to%20bake,%20preheat%20the%20oven%20to%20325%20F.%20Slice%20the%20logs%20into%201/8-inch%20thick%20cookies%20and%20place%20them%20on%20parchment%20or%20silicone-lined%20cookie%20sheet.%20Place%20them%20about%201%201/2-2%20inches%20apart;%20you%20will%20get%2012%20cookies%20to%20a%20sheet.%20Brush%20each%20cookie%20lightly%20with%20the%20beaten%20egg%20white.%20Sprinkle%20each%20cookie%20with%20finely%20chopped%20pistachios%20and%20coarse%20gold%20sprinkles.%20Bake%20for%2018-20%20minutes,%20until%20golden%20brown%20and%20crisp.%20Let%20cool%20on%20sheet.%3C/p%3E%3Cp%3EThese%20cookies%20will%20keep%20in%20a%20tin%20for%20quite%20some%20time,%20at%20least%20a%20few%20weeks.%20They%20are%20very%20similar%20to%20shortbread%20in%20that%20respect,%20although%20I%20have%20not%20tested%20it%20past%202%201/2%20weeks%20yet.%3C/p%3E){kind=link}
