Ingredients
- 8 oz lean sirloin steak, sliced thinly (best if partially frozen)
- 2 cups fresh broccoli florets
- 2 cloves garlic, crushed
- 2 tbs oil
- Tenderizing Marinade:
- 2 tbs white wine or rice wine
- 4 tbs soy sauce
- 2 tsp cornstarch
- 1 tsp baking soda
- Stir Fry Sauce:
- 4 tbs soy sauce
- 2 tbs dry sherry or dry white wine
- 1 thin slice ginger, crushed
- 1/8 tsp white pepper
- 1/2 tsp dark sesame oil
- 1 tsp ketchup
- 1/2 cup water
- Thickener:
- 1/2 cup cold water
- 2 tbs cornstarch

.%3C/p%3E%3Cp%3EAnyway,%20I%20went%20to%20my%20best%20pal%20Google%20and%20simply%20typed%20my%20question...%22how%20to%20get%20meat%20tender%20like%20Chinese%20restaurant,%22%20and%20I%20came%20up%20with%20several%20possibilities.%20%20I%20read%20about%20a%20technique%20called%20%22velveting,%22%20which%20appears%20to%20be%20used%20for%20chicken%20and%20such%20and%20involves%20the%20use%20of%20cornstarch.%20%20I%20thought%20I%20may%20be%20set.%20%20However,%20I%20wanted%20to%20check%20out%20*other*%20possibilities.%20%20I%20happened,%20just%20out%20of%20pure%20luck,%20to%20find%20a%20message%20board%20where%20someone%20asked%20the%20exact%20question%20I%20did.%3C/p%3E%3Cp%3EThis%20was%20just%20a%20plain%20old%20message%20board,%20like%20back%20in%20the%20early%20internet%20days%20of%20BBS%20and%20Usenet...but%20there%20was%20my%20answer.%3C/p%3E%3Cp%3EThey%20talked%20about%20velveting,%20and%20one%20gal%20said%20that's%20what%20her%20mom%20uses%20for%20everything,%20but%20cornstarch%20is%20expensive%20and%20restaurants%20look%20to%20save%20money%20so%20they%20probably%20used%20%20baking%20soda%20primarily.%20%20She%20said%20especially%20if%20the%20meat%20has%20that%20slightly%20spongy%20texture.%20%20BINGO.%20%20And%20below%20is%20the%20marinade%20mixture%20she%20gave.%20%20And%20Eureka,%20it%20WORKS.%3C/p%3E%3Cp%3EBeef%20&%20Broccoli%3C/p%3E%3Cp%3EMix%20tenderizing%20marinade.%20%20Pour%20in%20a%20zipper%20freezer%20bag%20and%20add%20the%20sliced%20sirloin.%20%20Seal%20bag%20and%20mush%20the%20beef%20around%20in%20the%20marinade%20so%20it's%20coating%20all%20the%20meat.%20%20Place%20bag%20in%20the%20refrigerator%20for%201%20hour.%20%20Meanwhile,%20mix%20the%20stir%20fry%20sauce%20ingredients%20in%20a%20small%20dish%20and%20set%20aside.%20%20Mix%20the%20thickener%20ingredients%20in%20another%20small%20dish%20and%20set%20aside.%3C/p%3E%3Cp%3ERemove%20meat%20from%20the%20bag,%20draining%20off%20marinade.%3C/p%3E%3Cp%3EHeat%20a%20large%20wok%20or%20a%20large%20deep%20skillet%20over%20high%20heat.%20%20Add%20the%20oil.%20%20When%20oil%20begins%20to%20shimmer,%20add%20the%20garlic%20and%20the%20drained%20meat.%20%20Stir%20fry,%20stirring%20constantly,%20until%20meat%20is%20no%20longer%20pink.%20%20Add%20broccoli%20and%20stir%20fry%20for%20about%201%20minute%20or%20until%20broccoli%20is%20bright%20green%20in%20color.%3C/p%3E%3Cp%3EAdd%20the%20stir%20fry%20sauce%20and%20stir%20in%20well.%20%20Bring%20sauce%20to%20a%20boil.%20Stir%20the%20thickener%20until%20no%20lumps%20are%20present%20and%20add%20to%20meat/broccoli%20mixture,%20stirring%20constantly%20until%20sauce%20begins%20to%20bubble.%20%20Cook%20for%201%20minute.%20%20Serve%20immediately%20over%20rice.%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EBeef%20&%20Broccoli%3C/p%3E){kind=link}
