%20gotten%20to%20the%20bottom%20of%20Landon's%20food%20allergy%20issues.%20It%20seems%20that%20he%20is%20allergic%20to%20just%20soy%20and%20not%20dairy.%20Did%20you%20hear%20me?!%20Cheese%20is%20reentering%20my%20life.%20Slowly...%20very%20slowly...%20but%20still,%20it's%20amazing.%20I've%20only%20introduced%20him%20to%20cooked%20dairy%20and%20very%20little%20at%20that,%20but%20so%20far%20he's%20ok.%20I%20can't%20even%20tell%20you%20how%20happy%20this%20makes%20me.%20However,%20he%20is%20highly%20allergic%20to%20soy%20and%20reacts%20to%20even%20the%20smallest%20trace%20of%20soy,%20so%20life%20is%20still%20interesting%20'round%20these%20parts.%3C/p%3E%3Cp%3EAs%20you%20all%20know,%20I%20love%20my%20Asian%20food%20but%20for%20now%20that%20love%20is%20on%20hold.%20Really%20I%20can%20wait%20another%208%20months%20for%20some%20Chinese%20and%20Thai%20food%20(I%20think...).%20I%20made%20these%20lettuce%20wraps%20prior%20to%20discovering%20his%20soy%20allergy%20and%20they%20were%20excellent.%20Every%20now%20and%20then%20I%20get%20sick%20of%20the%20same%20old%20meals%20and%20crave%20something%20different.%20This%20was%20definitely%20different%20for%20us!%20We%20both%20loved%20them%20and%20it%20was%20a%20nice%20healthy%20meal.%20Plus,%20best%20of%20all%20it%20came%20together%20in%20no%20time.%20The%20rice%20is%20optional,%20but%20I%20knew%20John%20wouldn't%20be%20too%20impressed%20with%20wrapping%20some%20veggies%20in%20another%20veggie%20if%20there%20wasn't%20a%20carb%20involved.%20I%20have%20to%20say%20I%20did%20like%20the%20rice%20mixed%20in%20to%20the%20wraps,%20so%20I'd%20make%20it%20if%20I%20were%20you!%3C/p%3E%3Cp%3ESource:%20Heavily%20adapted%20from%20Rachel%20Ray%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1-%20In%20a%20large%20skillet%20or%20wok%20heat%20your%20oil.%20Add%20the%20mushrooms,%20chicken,%20and%20bell%20pepper.%20Stir,%20cooking%20over%20medium%20heat,%20for%205%20minutes.%3C/p%3E%3Cp%3E2-%20Add%20the%20garlic%20and%20continue%20cooking%20until%20the%20chicken%20is%20cooked%20through.%3C/p%3E%3Cp%3E3-%20Add%20the%20sauce%20and%20raise%20the%20heat%20until%20sauce%20is%20coating%20the%20mix.%3C/p%3E%3Cp%3E4-%20Serve%20with%20lettuce%20leaves%20and%20rice,%20if%20desired.%3C/p%3E){kind=link}
