Balsamic Chicken Recipe

This is just a quick tasty meal. I was looking for something different to dress up my chicken. I wanted something quick I could throw together after work. Its got a great taste to it and is quick to make. My kind of cooking!

I have made this with just onions and sometimes I slice up roasted red peppers in it. It is great either way. Serve this over some buttered egg noodles with a green veggie and you got yourself a winner, weeknight, 30 minute meal!

Ingredients

Directions

  1. Salt and pepper the chicken breast
  2. Coat them with the bread crumbs
  3. Add 1 tablespoon to pan and brown chicken breast
  4. Remove from pan and place in a covered oven safe dish
  5. drizzle a little balsamic over the chicken and add 1/2 cup chicken stock to dish
  6. Bake at 350.
  7. On stove top, add 1/2 cup balsamic and the rest of the chick stock and bring to a boil.
  8. Reduce sauce by half
  9. Add 1 tablespoon of Mustard and 1 tablespoon of butter.
  10. Mix well and pour mixture over top of chicken.
  11. Continue baking until chicken juices run clear. Should be a total cook time about 30 minutes, depending on your oven.
