Ingredients

  • 1 bn ( 1-1.5 lb) of swiss chard (or possibly greens of choice)
  • 1 x 2 tomatoes, minced (or possibly one cn Minced tomatoes)
  • 1 x 2 Tablespoons balsamic vinegar Freshly cracked black pepper To taste

Directions

  1. Wash the chard and chop or possibly tear into peices, discarding tough stems. Saute/fry tomatoes over medium heat in large skillet till cooked to desired consistancy, 5-15 minutes. (I like mine on the soft side). Add in vinegar, chard and water if needed. Cover and steam vegetables till cooked to desired doneness, 5-15 minutes. Check occasionally to be sure there is sufficient water in the pan.
  2. Cooking time for tomatoes and greens depends on how tough the greens are, smaller, younger leaves will be more tender; and how well cooked you like the vegetables.
