Balsamic And Roasted Garlic Dipping Oil Recipe

Ingredients

  • 25 x garlic cloves unpeeled
  • 2 Tbsp. extra virgin olive oil plus
  • 1 c. extra virgin olive oil, preferably extra-virgin Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. balsamic vinegar
  • 2 1/2 tsp chopped fresh rosemary

Directions

  1. Preheat oven to 350 degrees. Place unpeeled garlic cloves in baking dish. Add in 2 Tbsp. extra virgin olive oil and sprinkle with salt and pepper; toss to coat. Cover dish tightly with foil and bake till garlic is golden and tender, about 45 min. Cold.
  2. Squeeze garlic between fingertips to release cloves. Transfer garlic cloves to blender. Add in vinegar and rosemary and puree herb mix till smooth. With machine running, gradually add in remaining 1 c. extra virgin olive oil. Season to taste with salt and pepper. (Dipping oil can be prepared 1 day ahead. Cover and chill. Let stand 15 min at room temperature and whisk before using.)

  5. Try this versatile dipping oil with bite-size pcs of your favorite breads - or possibly drizzled over sliced tomatoes.
