Ingredients
- 1 cup all purpose flour
- 1/2 cup white whole wheat flour
- 1/4 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 cup melted coconut oil, cooled slightly
- 2/3 cup light brown sugar
- 2 eggs
- 3/4 cup cooked plain oatmeal (see note)
- 1/2 cup unsweetened applesauce
- 1 cup finely chopped apple (I used a Pink Lady and I left the skin on)
- Walnut Oat Streusel (optional):
- 2 tablespoons all purpose flour
- 2 tablespoons old fashioned oats
- 2 tablespoons brown sugar
- 1/4 cup chopped walnuts
- 1/4 teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter, cut into small pieces
