Easy, elegant starter full of flavours and textures. Move out of your salad comfort zone and impress your guests with this deliciously simple yet flavoursome salad that takes just 20 minutes to prepare.

  1. PREP - Wash and core the pears and slice thinly. Drizzle with lemon juice and set aside. Peel and thinly slice the celeriac and drizzle with lemon juice. Coarsely chop the walnuts. Wash the chicory leaves.
  2. COMBINE - Make the dressing by combining the olive oil, balsamic vinegar, a little salt and a grinding of black pepper. Add the pieces of walnut to the vinaigrette.
  3. DRESS - Arrange the chicory leaves, slices of pears and celeriac in a serving dish. Drizzle with the vinaigrette and serve.
