Directions

  1. Put beans in 2 1/2 gallon pot of water and soak overnight. Drain off and add in approximately 1 gallon fresh water, ham and garlic. Boil 3 to 4 hrs till beans are tender. Slice and fry bacon till crisp. Saute/fry onion in bacon fat. Add in bacon, grease and onion to beans. Saute/fry sausage in small pcs and add in to beans. Cook collard greens and fold in soup. Add in saffron and another 10 min. Serve with vinegar and extra virgin olive oil if you like.

    I have been making this soup since the 70's. it never fails to please even those who think they don't like collard greens. I have substituted turnip greens for the collards and often use fresh collards. I prepare them,use what I need for the soup, then freeze the rest. I usually use an entire pound of sausage in this soup as my family loves it. Freezes well.
    I've cooked/tasted this recipe!
