Ingredients
- Recipe very closely adapted from Joanne Chang (Flour)
- 1 1/2 cups (210 g) AP flour
- 1/2 cup (100 g) granulated sugar
- 1/3 cup (40 g) Dutch processed cocoa powderâI used Valrhona
- 2 t instant espresso
- 1 t baking soda
- 1/4 t salt-she calls for Kosher but I used fine grained sea salt
- 1 cup water
- 1/4 cup neutral flavored oil (I used olive, she calls for canola)
- 1 t vanilla
- 2 T unsulfured light or dark molasses (I ran out and topped off with agave syrup)
