Ingredients

  • 3 cups (24oz, 720gr) whole tomatoes, puréed
  • 1/2 cup (4oz, 120ml) vegetable or chicken stock
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 rib celery, finely chopped
  • 1 medium carrot, finely chopped
  • 2 tsp olive oil
  • 1/2 tsp cinnamon
  • 1/4 tsp powdered ginger
  • 1/4 cup orzo
  • 1 tbs parsley
  • 1 tsp basil
  • 1 small preserved lemon, peel only (discard pulp) 1/2 chopped, 1/2 sliced for garnish
  • 2 tbs Greek yogurt
