- 2 pkg. cream cheese (Now I usually use Neufchâtel or 1/3 Less Fat Cream Cheese.)
- 8 oz. can crushed pineapple, drained well
- 1 T. season salt (like Lawryâs)
- 1 t. dried onion flakes
- 1/4 c. dried bell peppers flakes (like Cainâs)
- 1 c. chopped pecans, divided

,%20I%20was%20thrilled.%20%20%20%20%20We%20had%20been%20dating%20a%20long%20time%20and%20I%20had%20only%20met%20the%20parents%20once.%3C/p%3E%3Cp%3EIt%20was%20to%20be%20a%20momentous%20occasion%20to%20be%20sure.%3C/p%3E%3Cp%3EHis%20family%20always%20celebrated%20on%20Christmas%20Eve%20with%20an%20appetizer/sandwich/snack%20buffet.%20%20%20%20I%20was%20to%20find%20out%20there%20were%20lots%20of%20traditions%20with%20this%20buffet.%3C/p%3E%3Cp%3EHis%20mother%20had%20to%20make%20cocktail%20meatballs,%20there%20had%20to%20be%20French%20onion%20dip,%20the%20sandwiich%20bar%20with%20turkey,%20ham,%20loads%20of%20cheeses%20was%20enormous,%20and%20the%20famous%20(and%20secret)%20punch%20had%20to%20be%20concocted.%3C/p%3E%3Cp%3EWhat%20was%20I,%20a%20newcomer,%20to%20bring?%3C/p%3E%3Cp%3EAfter%20much%20deliberation%20(and%20trepidation),%20I%20decided%20to%20bring%20my%20own%20family%E2%80%99s%20favorite%20cheese%20ball.%3C/p%3E%3Cp%3EWhen%20I%20declared%20my%20decision%20to%20my%20then%20boyfriend,%20he%20looked%20skeptical.%20%20%20%20Cheese%20balls%20were%20not%20a%20customary%20item%20on%20the%20Christmas%20buffet.%3C/p%3E%3Cp%3EI%20persevered.%3C/p%3E%3Cp%3ENeedless%20to%20say,%20it%20was%20a%20hit%20and%20my%20soon%20to%20be%20brother-in-law%20ate%20half%20of%20it%20by%20himself.%20%20%20%20%20He%20has%20had%20only%20one%20question%20for%20me%20at%20all%20holidays%20since:%20%20%20%20%20%E2%80%9CAre%20you%20bringing%20the%20cheese%20ball?%E2%80%9D%3C/p%3E%3Cp%3EI%20have%20no%20idea%20where%20this%20recipe%20came%20from.%20%20%20I%20copied%20it%20down%20long%20ago%20into%20my%20Betsey%20Clark%20recipe%20album.%20%20%20I%20bet%20I%20was%20twelve%20or%20thirteen%20when%20I%20originally%20copied%20the%20recipe.%3C/p%3E%3Cp%3EReady%20for%20the%20Christmas%20buffet.%3C/p%3E%3Cp%3ELet%20cream%20cheese%20come%20to%20room%20temperature.%20%20%20%20%20Place%20pineapple%20in%20a%20sieve%20and%20let%20it%20drain%20well,%20pushing%20out%20excess%20moisture.%3C/p%3E%3Cp%3EPlace%20cream%20cheese,%20drained%20pineapple,%20season%20salt,%20onion%20flakes,%20dried%20bell%20peppers%20and%201/2%20cup%20of%20pecans%20in%20the%20bowl%20of%20a%20stand%20mixer%20attached%20with%20the%20whip.%20%20%20%20(Reserve%20the%20remaining%20pecans%20to%20roll%20the%20ball%20in.)%3C/p%3E%3Cp%3EMix%20until%20smooth.%3C/p%3E%3Cp%3ESpread%20a%20large%20sheet%20of%20plastic%20wrap%20on%20the%20counter.%20%20%20%20%20Sprinkle%20remaining%20pecans%20on%20sheet.%3C/p%3E%3Cp%3ESlightly%20moisten%20hands%20and%20form%20cheese%20mixture%20into%20a%20ball.%20%20%20%20Roll%20ball%20in%20pecans%20and%20use%20the%20plastic%20wrap%20to%20help%20you%20coat%20the%20ball%20and%20shape%20it.%3C/p%3E%3Cp%3EWrap%20up%20in%20the%20plastic%20wrap%20and%20let%20set%20for%20at%20least%20three%20hours%20in%20the%20fridge%20before%20serving.%3C/p%3E%3Cp%3EServe%20with%20your%20favorite%20cracker.%3C/p%3E%3Cp%3ESince%20my%20brother-in-law%20lives%20far%20away%20now%20and%20we%20often%20do%20not%20get%20to%20see%20him%20and%20his%20family%20at%20Christmas,%20I%20have%20been%20known%20to%20mail%20him%20his%20own%20cheese%20ball%20kit.%3C/p%3E%3Cp%3EThis%20year%20I%20plan%20to%20get%20a%20new%20quart%20paint%20can%20and%20seal%20these%20ingredients%20inside%20for%20him.%20%20%20All%20he%20will%20have%20to%20do%20is%20buy%20a%20couple%20of%20packages%20of%20cream%20cheese.%3C/p%3E%3Cp%3EA%20package%20of%20seasoning,%20a%20package%20of%20pecans,%20and%20a%20can%20o%E2%80%99%20pineapple.%3C/p%3E%3Cp%3EI%20am%20going%20to%20try%20my%20darndest%20to%20keep%20%20up%20with%20posting%20some%20gift%20ideas%20from%20the%20kitchen%20and%20otherwise%20during%20this%20month.%20%20%20%20It%20is%20starting%20off%20pretty%20busy%20so%20we%20will%20have%20to%20see.%3C/p%3E%3Cp%3EGood%20luck%20with%20all%20your%20gifting,%20prepping,%20decorating,%20and%20planning.%3C/p%3E%3Cp%3EFor%202010,%20I%20was%20really%20original%20and%20did%20the%20Twelve%20Days%20of%20Christmas.%3C/p%3E%3Cp%3EP.S.%20%20Suzy%20at%20Two%20Dogs%20in%20the%20Kitchen%20posted%20a%20pretty%20similar%20cheese%20ball%20with%20pineapple%20and%20ham%20that%20also%20sounds%20very%20tasty!%20%20%20%E2%80%98Tis%20the%20season%20for%20cheese%20balls!%3C/p%3E){kind=link}
