  • 2 Medium sized Cucumbers (seedless preferred), diced
  • 1 Medium sized Tomatoes, diced
  • 1 stem Scallions, chopped (white and greens)
  • 1/2 Cup Roasted peanuts and cashews (optional)
  • For the Dressing
  • 1 no Lime
  • 2 garlic pods, minced
  • Handful finely chopped parsley and cilantros,
  • 1 Tbsp Olive Oil
