  • 1 (10 ounce) pkg. frzn breaded sm. chunk-shape chicken pcs
  • 1 (8 to 10 ounce) jar sweet & sour sauce
  • 1 (6 ounce) pkg. frzn pea pods
  • 1 c. quick-cooking rice
  • 1 (16 ounce) can unpeeled apricot halves, liquid removed

Directions

  1. Bake chicken chunks according to package directions. Meanwhile, in a medium saucepan, bring 1 cup water to boiling. Stir in rice. Remove pan from heat. Cover and let stand 5 min.In a saucepan mix the apricots, sweet and sour sauce and pea pods. Cook and stir till mix is heated through. To serve, spoon rice on a platter. Arrange chicken over rice around the edge of the platter. Spoon apricot mix into the center of the chicken. Makes 4 servings.
