Stuffed onions Recipe

Vickie created this recipe from an existing recipe. The original recipe was okay if you are not trying to lose weight and get fit. Here is Vickie's healthier version.

Ingredients

  • 4 extra-large sweet onions, peeled
  • 2 cups frozen vegetable medley, thawed (Birds Eye is good)
  • 2 tablespoons herb garden seasoning (I use Mrs. Dash)
  • 3/4 cup shredded "Veggie Shreds" (or shredded Almond Cheese),divided.
  • 4 tablespoons Earth Balance spread (can use olive oil)

Directions

  1. Preheat oven to 400 degrees.
  2. Slice off the top third of each onion and set aside.
  3. Slice an "X" in the inner 2/3 off each onion.
  4. Remove the inside of the onion with a small spoon till you have a bowl.
  5. Dice the removed inner section of the onions and set aside.
  6. In a medium bowl combine the vegetable medley, diced onion, seasoning and 1/2 cup of
  7. the cheese.
  8. Evenly divide the mixture into each onion bowl.
  9. Top each filled onion with a tablespoon of Earth Balance Spread.
  10. Sprinkle the remaining 1/4 cheese on the onion.
  11. Place the filled onions in a small casserole dish and cover with foil and in the oven for 25
  12. minutes then remove foil the last 5 to 10 minutes and cook until onions are tender and the
  13. cheese is melted.
