  • 1 lb spinach coarse stems
  •     discarded, leaves washed well and spun
  •     dry (about 6 c.)
  • 10 ounce mushrooms sliced thin
  • 3 x bacon slices cooked till crisp,
  •     liquid removed, crumbled
  • 2 x scallions chopped
  • 2 x hard-boiled Large eggs minced
  • 1/4 c. Spinach Salad Dressing see * Note

Directions

  1. Chiffonade spinach and place on platter. Mound mushrooms in center of platter. Sprinkle bacon, scallions, and hard-boiled egg around mushrooms and spinach. Drizzle with Spinach-Salad Dressing.
