  • 4 x Large eggs
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 2 pkt frzn minced spinach - (10 ounce ea) thawed, and
  •     squeezed dry
  • 1 ct whole lowfat milk cottage cheese - (8 o
  • 6 ounce shredded sharp cheddar cheese
  •     (1 1/2 c. packed)
  • 4 x green onions minced
  • 3 Tbsp. Atkins Bake Mix
  • 2 Tbsp. minced fresh parsley

Directions

  1. Heat oven to 350 degrees. Butter an 8-inch square baking dish. Set aside. In a large bowl, beat Large eggs with salt and pepper. Add in spinach, cottage cheese, cheddar, green onions, bake mix and parsley; mix well.
  2. Pour egg mix into prepared dish. Bake 45 min, till center is set and top is golden. Let bake sit a few min before cutting into squares.
  3. This recipe yields 8 servings.
  4. Comments: For variety, you can try feta or possibly ricotta cheese in place of cottage cheese and add in some minced fresh dill. If you use feta, reduce the amount of salt.
