Ingredients
- 1 can of white beans, drained
- 8 oz of pasta ( reserve pasta water)
- 10 oz package of frozen spinach, thawed and squeezed of extra water
- 1 T oil
- 1/2 cup onion diced
- 2 garlic cloves, minced
- 1 cup diced summer squash
- 1 cup chopped cooked chicken
- 1/2 cup lowfat ricotta cheese
- 1/2 cup grated parmesan
- salt and pepper
Directions
- cook the pasta according to directions and reserve pasta water.
- Saute in a skillet the onion and garlic until softened. Add in squash and chicken, beans and spinach. Add in a ladle full of pasta water and let simmer for a few minutes warm everything. Kill the heat and add in pasta and cheeses. Season with salt and pepper.
