.%20%20%20There%20are%20a%20LOT%20of%20great%20pumpkin%20recipes%20out%20there.%3C/p%3E%3Cp%3EThat%20must%20mean%20one%20thing%E2%80%A6.Halloween%20is%20almost%20here%20and%20Thanksgiving%20will%20follow%20close%20behind.%3C/p%3E%3Cp%3EWe%20have%20had%20fewer%20and%20fewer%20Trick-or-Treaters%20the%20past%20few%20years.%20%20%20When%20we%20moved%20into%20our%20house%20almost%20fourteen%20years%20ago,%20we%20had%20probably%20fifty.%20%20%20Now,%20we%20are%20lucky%20to%20get%20five%20or%20six%20which%20leaves%20me%20in%20a%20predicament.%3C/p%3E%3Cp%3EHow%20much%20candy%20do%20I%20actually%20buy?%20%20%20%20I%20have%20this%20nightmare%20that%20I%20will%20run%20out%20and%20have%20to%20search%20through%20the%20house%20for%20some%20peppermints%20leftover%20from%20a%20Sonic%20run%20or%20worse%20yet,%20hand%20out%20apples%20or%20oranges%20from%20the%20kitchen%20counter.%3C/p%3E%3Cp%3EI%20can%20just%20hear%20the%20kids%20now,%20%E2%80%9CWhoa,%20don%E2%80%99t%20go%20to%20that%20house.%20%20%20They%E2%80%99ve%20got%20nuttin%E2%80%99!%E2%80%9D%3C/p%3E%3Cp%3EBut,%20I%20compromised%20this%20year%20and%20have%20purchased%20individual%20packages%20of%20pretzels%20and%20little%20cute%20boxes%20of%20temporary%20Halloween%20tattoos.%20%20%20Hopefully,%20if%20we%20don%E2%80%99t%20have%20many,%20we%20can%20eat%20the%20pretzels%20ourselves%20and%20save%20the%20tattoos%20for%20next%20year.%3C/p%3E%3Cp%3EHere%20is%20my%20version:%3C/p%3E%3Cp%3ESpicy%20Pumpkin%20Soup%3C/p%3E%3Cp%3EPlace%20a%20stock%20pot%20over%20medium%20to%20high%20heat.%20%20%20Add%20the%20oil.%20%20%20When%20oil%20is%20hot,%20add%20onions%20and%20jalapenos%20and%20saute%20for%20three%20minutes.%20%20%20Add%20garlic%20and%20saute%20another%20two%20minutes,%20being%20careful%20not%20to%20burn%20the%20garlic.%20%20Add%20the%20spices%20and%20stir.%3C/p%3E%3Cp%3EThese%20were%20pretty%20large%20garlic%20cloves%20and%20the%20jalapeno%20was%20a%20mild%20one%20from%20the%20garden%20so%20I%20didn%E2%80%99t%20seed%20it.%3C/p%3E%3Cp%3EAdd%20the%20vegetable%20stock,%20pumpkin%20and%20beans.%20%20%20Simmer%20for%2020%20minutes,%20uncovered.%20%20%20After%2020%20minutes,%20add%20the%20vinegar%20and%20honey%20and%20simmer%20another%203-5%20minutes.%3C/p%3E%3Cp%3EUsing%20an%20immersion%20blender,%20puree%20the%20soup%20until%20smooth.%20%20%20%20Simmer%20for%2010%20more%20minutes.%3C/p%3E%3Cp%3EServe%20with%20a%20leafy%20salad%20and%20a%20good%20%E2%80%9Cdipping%E2%80%9D%20bread.%3C/p%3E%3Cp%3EMy%20soup%20was%20a%20bit%20thin%20so%20it%20really%20lent%20itself%20to%20a%20good%20bread%20to%20sop%20it%20up.%20%20%20I%20added%20a%20bit%20more%20pumpkin%20which%20was%20probably%20a%20bit%20thinner%20than%20a%20canned%20pumpkin%20because%20I%20roasted%20my%20own.%20%20%20I%20also%20added%20a%20large%20can%20of%20beans%20that%20I%20did%20not%20drain.%3C/p%3E%3Cp%3EThis%20would%20be%20a%20great%20soup%20to%20serve%20tomorrow%20for%20%E2%80%9CPumpkin%20Day%E2%80%9D!%20%20%20%20Those%20Trick-or-Treaters%20might%20want%20to%20come%20in%20and%20%20sample%20some%20as%20the%20aroma%20wafts%20through%20the%20house.%3C/p%3E){kind=link}
