Directions

  1. Soften the onion and potato in the butter.
  2. Add in remaining ingredients except the cream. Chop the parsnips small if you wish to reduce the cooking time. Cook for 45 min.
  3. Blend, when cold, in a liquidizer till very smooth. If desired soup with no bits, sieve it in addition.
  4. Add in the cream before serving and check the seasoning.
