Don't get me wrong, I love walking our two dogs. Lilly, a rescue German Shepard mix. Lucky, a rescue Maltipoo. Lucky, I can't tire her out, no matter how hard I try. Anyway, I need two days to walk by myself, faster pace and longer distance. So, on the first solo walk of the week, I was thinking of new breakfast ideas. Came up with this breakfast bowl about the halfway point. Easy to make, creamy and filling. I hope you enjoy the bowl. Mangia

Ingredients

  • One slice of your favorite bread
  • Cottage cheese - we use 2%, about one-third cup
  • Small Avocado
  • Six cherry tomatoes
  • Soft boiled eggs - two
  • (I've been thinking about adding chopped wilted spinach. Maybe next time.)

Directions

  1. While the eggs are on toast the bread slice, butter and then cut into small squares. Place in bowl.
  2. Add one third cup of cottage cheese to the bowl.
  3. Prepare the avocado and scrape into the bowl.
  4. Rinse the cherry tomatoes and slice in half. Add to bowl.
  5. Top with the soft boiled eggs.
  6. This step is my favorite. Break the eggs and mix the ingredients to incorporate all the ingredients.
