Soft Boiled Egg on Fried Polenta Recipe

This isn't a recipe, rather a method.

Ingredients

  • Leftover polenta that has set up overnight
  • Soft boiled or poached egg, cooked the way you like it
  • 1 or 2T real maple syrup per serving

Directions

  1. Cut your polenta into 3 or 4 inch squares
  2. Fry about 5 minutes per side or until golden brown
  3. Soft boil or poach one egg per square
  4. To Plate:
  5. Pour the maple syrup onto the bottom of your plate or bowl
  6. Place polenta square in center
  7. Top with egg
  8. Serve
