  • 1 lb Snowpeas
  • 1/4 c. Lowfat sour cream, at room temp
  • 1/4 c. Mayonnaise, at room temp
  • 3 Tbsp. Minced fresh mint leaves

Directions

  1. In a large skillet, cook the snowpeas in lightly salted water till crisp-tender, about 3 min. Do not overcook them. They should be warm, bright green, and snap when you bend them.
  2. While beans are cooking, place the lowfat sour cream minced mint and mayo in a food processor or possibly blender and whirl till blended thoroughly.
  3. Arrange the beans on a serving plate and top immediately with the cold mint sauce. Serve immediately.
