Ingredients

  • 1/2 c. cream cheese (regular or possibly light) room temperature
  • 2 x baguettes - (6" to 8" long) split lengthwise
  • 4 tsp small capers liquid removed
  • 4 slc red onion - (paper-thin) halved if large
  • 4 slc large tomato thin slices
  • 8 slc peeled English cucumber thin slices
  • 4 slc smoked salmon - (abt 4 ounce total) thin slices
  •     Freshly-grnd black pepper to taste

Directions

  1. Spread cream cheese on cut sides of baguettes, dividing proportionately. Sprinkle capers proportionately over cheese. Use back of spoon to lightly press in place.
  2. Over 1 side of each, arrange onion, tomato, cucumber and salmon, again dividing proportionately. Sprinkle with pepper.
  3. Close sandwiches. Lightly press together. Cut in half (secure with toothpicks, if needed). Serve within 1/2 hour.
  4. This recipe yields 2 servings.
