  • 1 kg potatoes, peeled, thinly sliced
  • 1 med onion, coarsely minced
  • 1 x 440g can Cream of Pumpkin soup
  •     pepper
  • 1/2 x soup can lowfat milk
  • 3/4 c. breadcrumbs

Directions

  1. Layer potatoes & onions in a shallow casserole. Combine soup & lowfat milk & seasoning. Pour over potatoes, sprinkle with breadcrumbs. Bake 1 hour @ 190 degrees C.
