.%3C/p%3E%3Cp%3EAnd%20yet,%20as%20wonderful%20as%20the%20chowder%20was%20(still%20stay%20tuned),%20the%20bread%20really%20deserved%20some%20solo%20props.%3C/p%3E%3Cp%3EI%20needed%20a%20side%20for%20the%20chowder%20that%20would%20suffice%20as%20both%20bread%20(because%20I%20wanted%20it)%20and%20a%20vegetable%20or%20salad%20(because%20I%20needed%20it).%20That's%20a%20tall%20order,%20I%20know.%20But%20I%20was%20willing%20to%20stretch%20the%20truth%20a%20little%20if%20I%20found%20something%20even%20close.%3C/p%3E%3Cp%3EBrowsing%20through%20my%20Pinterest%20food%20boards,%20I%20came%20across%20a%20recipe%20I%20had%20pinned%20a%20while%20ago%20for%20a%20quick%20bread%20loaded%20with%20greens:%20perfect.%3C/p%3E%3Cp%3EThen%20I%20read%20the%20recipe.%3C/p%3E%3Cp%3EIt%20involved%20a%20whole%20lot%20of%20onion%20carmelization%20before%20you%20could%20even%20start%20thinking%20about%20the%20bread%20batter.%20That%20wouldn't%20work,%20as%20I%20needed%20a%20quick%20bread,%20not%20a%20stand-around-and-carmelize-till-the-cows-come-home%20bread.%3C/p%3E%3Cp%3EThe%20blogger%20of%20that%20recipe,%20however,%20had%20very%20kindly%20provided%20some%20links%20to%20other%20savory%20quick%20bread%20recipes,%20including%20this%20one%20for%20French%20olive%20bread,%20which%20originates%20with%20Susan%20Hermann%20Loomis,%20of%20On%20Rue%20Tatin%20fame%20(I%20loved%20that%20book!).%3C/p%3E%3Cp%3EAs%20is%20The%20Way%20of%20The%20Ninj,%20I%20made%20a%20number%20of%20modifications,%20based%20on%20what%20sounded%20good%20to%20me,%20what%20ingredients%20I%20had%20on%20hand%20and,%20frankly,%20the%20fact%20that%20I%20misread%20the%20cooking%20temperature%20and%20recommended%20time.%3C/p%3E%3Cp%3E(Seriously.%20I%20don't%20know%20how%20it%20didn't%20come%20out%20completely%20screwed%20up.)%3C/p%3E%3Cp%3EThe%20bread%20is%20very%20rich%20and%20very%20dense%20--%20and%20literally%20packed%20with%20veggies.%20Given%20the%20briney%20olives%20and%20roasted%20peppers,%20the%20flavors%20are%20wonderfully%20tangy%20without%20being%20too%20overwhelming;%20you%20can%20still%20appreciate%20the%20earthiness%20of%20the%20spinach%20and%20the%20hint%20of%20sweetness%20from%20the%20dough%20itself.%20In%20fact,%20I%20bet%20it%20would%20be%20a%20very%20hearty%20breakfast%20bread%20(and%20a%20great%20way%20to%20sneak%20in%20some%20veggies%20first%20thing%20in%20the%20morning).%20Additionally,%20I%20can%20see%20this%20bread%20translating%20wonderfully%20into%20muffins%20or%20mini%20loaves,%20perfect%20for%20freezing.%3C/p%3E%3Cp%3EIt's%20exactly%20the%20salad-cum-bread%20that%20I%20needed.%3C/p%3E%3Cp%3EA%20very%20tall%20order%20fulfilled%20by%20a%20very%20happy%20accident.%3C/p%3E%3Cp%3EFrench%20Olive%20Bread%20(adapted%20from%20a%20Susan%20Hermann%20Loomis%20recipe%20as%20demonstrated%20by%20One%20Perfect%20Bite)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder%20and%20salt%20in%20a%20small%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20another%20large%20bowl,%20beat%20the%20eggs;%20whisk%20in%20the%20olive%20oil,%20then%20stir%20in%20the%20garlic%20and%20spinach.%20Add%20the%20flour%20mixture%20and%20stir%20until%20combined.%20Fold%20in%20the%20red%20peppers,%20olives,%20black%20pepper%20and%20cheese.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20a%20greased%20loaf%20pan%20and%20bake%20for%20about%2045-50%20minutes,%20until%20the%20bread%20is%20golden%20and%20a%20skewer%20inserted%20into%20the%20middle%20comes%20out%20clean.%20Let%20cool%20in%20the%20pan%20for%20about%2010%20minutes%20then%20continue%20cooling%20on%20a%20wire%20rack.%3C/p%3E){kind=link}
