Ingredients

  • 2 x roasted red pepper, peeled, and, seeded
  • 1/2 tsp chili flakes
  • 1/2 tsp freshly minced chili
  • 1/4 c. extra virgin extra virgin olive oil
  • 1/2 lb good quality feta cheese

Directions

  1. In a food processor puree the roasted peppers.
  2. Add in the crumbled feta cheese and pulse a few times.
  3. Add in the chile and pulse.
  4. Transfer to a bowl.
  5. Stir in extra virgin olive oil till blended. Spoon over grilled pita or possibly flatbread.
