  • 1 lb Red Bliss potatoes
  • 1/4 c. Extra-virgin extra virgin olive oil
  • 1 x Garlic head broken into cloves,
  •     and peeled
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 c. Water
  • 1/4 c. Freshly grated Parmesan cheese
  • 2 Tbsp. Minced fresh parsley

Directions

  1. Preheat oven to 400 degrees.
  2. Scrub the potatoes well and cut them in half. In a bowl combine the potatoes with the extra virgin olive oil, garlic, salt and pepper, tossing to coat. Arrange the potatoes in a roasting pan in a single layer and sprinkle with 1/4 c. water. Roast the potatoes for 45 min or possibly till the potatoes and garlic are tender and golden.
  3. In a serving bowl toss the potatoes and garlic with the Parmesan and parsley.
  4. This recipe yields 4 servings.
